Bikinnya juga gampang dan praktis.&lt;br /&gt;Aku lupa nih dapet dari blognya siapa...&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight:bold;"&gt;Tahu Kukus Jamur&lt;span style="font-weight:bold;"&gt;&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;Bahan :&lt;br /&gt;2 buah tahu putih&lt;br /&gt;3 buah jamur shitake segar, iris&lt;br /&gt;&lt;br /&gt;Olesan :&lt;br /&gt;150 gram udang kupas, haluskan&lt;br /&gt;1 sdm tepung sagu&lt;br /&gt;1 putih telur&lt;br /&gt;1 sdm irisan daun bawang&lt;br /&gt;garam, merica, dan gula pasir secukupnya&lt;br /&gt;&lt;br /&gt;Saus :&lt;br /&gt;3 sdm saus tiram&lt;br /&gt;1 sdm minyak goreng&lt;br /&gt;1 sdt minyak wijen&lt;br /&gt;1 sdm madu&lt;br /&gt;garam dan merica secukupnya&lt;br /&gt;&lt;br /&gt;Taburan :&lt;br /&gt;3 cm jahe, iris&lt;br /&gt;1 batang daun bawang, iris&lt;br /&gt;1 buah cabai merah besar, iris&lt;br /&gt;Daun ketumbar&lt;br /&gt;&lt;br /&gt;Cara membuat :&lt;br /&gt;Potong dua tahu bagian melebar, siapkan pinggan tahan panas dan dandang untuk mengukus.&lt;br /&gt;Olesan : campur udang, tepung sagu, putih telur, garam, merica, dan gula pasir, aduk rata. Tambahkan irisan daun bawang, aduk rata.&lt;br /&gt;Olesi bagian atas tahu dengan bahan olesan, tata irisan jamur diatasnya, taruh dalam pinggan tahan panas.&lt;br /&gt;Saus: campur saus tiram dengan minyak goreng, minyak wijen, madu, garam, dan merica, aduk rata, tuangkan ke tahu.&lt;br /&gt;Taburi dengan irisan jahe, daun bawang, dan cabai merah, kukus selama 15 menit hingga &lt;br /&gt;matang, angkat. Warna coklat&lt;br /&gt;   - Collata milk/dark compound 1000 gr&lt;br /&gt;   - Glukosa                     300 gr&lt;br /&gt;   - Air mineral                  50 gr&lt;br /&gt;&lt;br /&gt;2. Putih dan aneka warna&lt;br /&gt;   - Collata passionatta all variants and white compound   1000 gr&lt;br /&gt;   - Glukosa                                                150 gr&lt;br /&gt;   - Air mineral                                             35 gr&lt;br /&gt;&lt;br /&gt;Cara membuat :&lt;br /&gt;&lt;br /&gt;1. Potong kecil-kecil coklat dan lumerkan dengan cara di tim sampai leleh, matikan api.&lt;br /&gt;&lt;br /&gt;2. Ditempat lain campur glukosa dan air, lalu panaskan sampai larut saja.&lt;br /&gt;&lt;br /&gt;3. Setelah coklat mencapai panas suhu tubuh (cara ngeceknya teteskan sedikit ke punggung tangan, suam2 kuku) masukkan glukosa kedalam coklat leleh, aduk-aduk hingga minyak yang ada dalam coklat keluar. Boleh aduk dengan sendok kayu atau dengan tangan. Aduk terus sampai keluar fatnya. Tidak usah sampai habis sekali, kira-kira adonan coklat jadi 800 gr.&lt;br /&gt;&lt;br /&gt;4. Pisahkan minyak dari coklatnya. &lt;br /&gt;&lt;br /&gt;5. Masukkan adonan coklat ini dalam plastik dan simpan di suhu ruang. &lt;br /&gt;&lt;br /&gt;&lt;span style="font-style:italic;"&gt;Catatan :&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;1. Untuk mencairkan coklat putih dengan suhu 36C (supaya hasilnya bagus). Matikan api aduk terus sampai meleleh.&lt;br /&gt;2. Untuk mendapatkan warna natural, waktu melelehkan bisa tambahkan coklat warna 1/4 bagian saja, atau bisa diberi pewarna khusus coklat.&lt;br /&gt;mis.: coklat warna 250 gr, WHC 750 gr.&lt;br /&gt;3. Sebaiknya siapkan chocolate modelling sehari sebelum digunakan. Kalau untuk digunakan dadakan bisa juga, setelah jadi adonan masukkan kulkas 2-3 jam.&lt;br /&gt;4. Adonan chocolate modelling bisa tahan 3 bulan.&lt;br /&gt;5. Fat dari coklat bisa disimpan disuhu ruang, digunakan sewaktu-waktu untuk melembekkan adonan yang mengeras.&lt;br /&gt;6. Berasa keju banget...krn gimana ga...lha kejunya aja hampir 2/3 terigu...asin dari kejunya juga pas banget menurut lidahku. Ini ya resepnya :&lt;br /&gt;&lt;br /&gt;Bahan :&lt;br /&gt;250 gr keju edam yang matured (cap ayam hitam)&lt;br /&gt;250 gr butter&lt;br /&gt;350 gr terigu cakra (supaya lebih crunchy)&lt;br /&gt;3 butir kuning telur&lt;br /&gt;1/4 sdt merica halus&lt;br /&gt;&lt;br /&gt;untuk olesan :&lt;br /&gt;50 gr keju kraft parut&lt;br /&gt;1 sdm butter dilelehkan&lt;br /&gt;- Campur kedua bahan olesan ini.&lt;br /&gt;&lt;br /&gt;Caranya :&lt;br /&gt;&lt;br /&gt;- Panaskan oven 130C.&lt;br /&gt;&lt;br /&gt;- Kocok butter sampai lembut saja, masukkan kuning telur satu persatu, sambil dikocok rata. Matikan mixer.&lt;br /&gt;&lt;br /&gt;- Masukkan terigu, keju dan merica bubuk sedikit-sedikit, aduk dengan sendok kayu..sampai tercampur rata.&lt;br /&gt;&lt;br /&gt;- Aduk dengan tangan sebentar saja sampai tercampur rata. Jangan mengaduk dengan tangan terlalu lama, karena panas dari tangan membuat hasil kue jadi keras.&lt;br /&gt;&lt;br /&gt;- Tipiskan adonan dengan dialas plastik, digiling dengan rolling pin. Tebal adonan 1/2 cm.&lt;br /&gt;&lt;br /&gt;- Cetak adonan sesuai yang diinginkan, bisa bentuk panjang, atau bentuk bunga.&lt;br /&gt;&lt;br /&gt;- Letakkan adonan di loyang yang sudah dialas kertas roti dan dioles margarin. Telur, susu, air campur (ga usah diaduk) sisihkan.&lt;br /&gt;2. Di bowl mixer campur semua bahan kering, kecuali garam, butter dan bread emulsifier. Aduk rata&lt;br /&gt;3. Masukkan campuran telur, kocok sampai bergumpal.&lt;br /&gt;4. Setelah bergumpal, masukkan butter, garam dan emulsifier. mixer sampai kalis (klu mixer Bosch kec.2).&lt;br /&gt;5. Setelah kalis, istirahatkan 15 menit, dan bulatkan, ditutup plastic.&lt;br /&gt;6. Setelah 15 menit, timbang @ 50 gr, dan bulatkan dan disusun satu persatu ditutup plastic.&lt;br /&gt;7. Setelah semua bahan ditimbang, lalu bentuk dan isi sesuai selera, dan proofing +/- 60 menit, kemudian poles dengan telur + sedikit garam.&lt;br /&gt;8. Panggang dengan suhu tinggi +/- 190C api bawah, dan 170C api atas selama 10 menit.&lt;br /&gt;9. Setelah matang angkat dan poles dengan susu evaporated.&lt;br /&gt;&lt;br /&gt;Yield : 38 pcs @ 50 gr&lt;br /&gt;&lt;br /&gt;Note : Kalau saya ditimbang @40 gr, jadi 58 pcs.&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;ISI &lt;/span&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Apple almond filling :&lt;/span&gt;&lt;br /&gt;Apel manalagi         5 pcs&lt;br /&gt;Margarin                  30 gr&lt;br /&gt;Gula pasir                100-200 gr (tergantung selera)&lt;br /&gt;Air                            200 cc&lt;br /&gt;Maizena dan air        2 sdm&lt;br /&gt;Vanilla/rhum            10 gr&lt;br /&gt;Kulit lemon               2 gr&lt;br /&gt;Almond slice secukupnya&lt;br /&gt;&lt;br /&gt;Caranya : Buat gula jadi caramel, masukkan air, aduk, baru masukkan apel yang dipotong dadu. Cuci bersih cumi, hati2 tintanya jangan sampe pecah.&lt;br /&gt;2. Rebus cumi dengan bawang merah, bawang putih, jahe dan garam, rebus sampai cumi empuk.&lt;br /&gt;3.        (Bakery Magazine Indonesia Vol.2 Okt'09)&lt;br /&gt;&lt;br /&gt;Bahan kulit :&lt;br /&gt;A :&lt;br /&gt;100 gr creamy butter&lt;br /&gt;100 gr margarin&lt;br /&gt;80  gr hollman butter&lt;br /&gt;1   gr garam&lt;br /&gt;600 gr air&lt;br /&gt;&lt;br /&gt;B :&lt;br /&gt;300 gr tepung terigu protein sedang (B1)&lt;br /&gt;2   gr baking powder (B2)&lt;br /&gt;&lt;br /&gt;C :&lt;br /&gt;+/- 280 gr telur&lt;br /&gt;&lt;br /&gt;Caranya :&lt;br /&gt;&lt;br /&gt;1. Bahan A dimasak sampai mendidih, matikan api, lalu masukkan bahan B1, masak dan aduk rata, kemudian nyalakan api dan aduk sampai matang.&lt;br /&gt;&lt;br /&gt;2. Kemudian adonan dikocok dengan mixer, diwaktu hangat kuku masukkan bahan B2 dan C sedikit-sedikit, kocok sampai adonan terliahat licin dan nengkilat.&lt;br /&gt;&lt;br /&gt;3. Semprot adonan dengan spuit bintang besar/kecil/bolong diloyang atau cetakan yang telah dipoles mentega tipis.&lt;br /&gt;&lt;br /&gt;4. adonannya)&lt;br /&gt;50 gr keju cheddar parut&lt;br /&gt;1/4 sdt garam&lt;br /&gt;&lt;br /&gt;&lt;span style="font-size:130%;"&gt;&lt;span style="font-weight: bold;"&gt;Caranya :&lt;/span&gt;&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;- Rebus air, mentega, garam sampai mendidih awal saja.&lt;br /&gt;- Matikan api, masukkan tepung sekaligus.&lt;br /&gt;- Aduk sampai menggumpal dan kalis, kemudian dinginkan.&lt;br /&gt;- Masukkan telur satu persatu sambil dimixer dengan kecepatan rendah, liat dulu kekentalan adonannya.&lt;br /&gt;(catatan : bisa untuk telur yang terahir masukkan Rebus daging dalam bentuk potongan besar, dengan bawang putih.&lt;br /&gt;        2. Setelah daging empuk (tusuk dengan garpu terasa empuk), dan air tinggal sedikit,&lt;br /&gt;            angkat.&lt;br /&gt;        3. Potong-potong daging searah serat tipis sekali (+/- 1 mm) menggunakan pisau yang&lt;br /&gt;            tajam.&lt;br /&gt;        4. Rasanya istimewa sekali, dan buatnya juga mudah lho, coba deh....&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;by : Reny - dapur inspirasi&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;&lt;span style="font-weight: bold;"&gt;Bahan :&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;- 6 butir telur.&lt;br /&gt;- 3 gelas santan kental.&lt;br /&gt;- 300 gr gula merah, dicincang halus.&lt;br /&gt;- Gula pasir secukupnya.&lt;br /&gt;- Garam secukupnya.&lt;br /&gt;- 1 sdt bumbu spekuk -&gt; - 4 butir telur&lt;br /&gt; - 200 gr gula pasir&lt;br /&gt; - 100 gr terigu&lt;br /&gt; - 1 sdt baking powder&lt;br /&gt; - 600 gr tape singkong - &gt; dihaluskan&lt;br /&gt; - 100 gr mentega - &gt; dicairkan&lt;br /&gt; - 200 gr keju cheddar -&gt;  iris tipis&lt;br /&gt; - 50 gr keju cheddar parut untuk taburan.&lt;br /&gt;&lt;br /&gt;Caranya :&lt;br /&gt;&lt;br /&gt; - Kocok telur dan gula hingga kembang.&lt;br /&gt; - Masukkan terigu, baking powder, tape yang sudah dihaluskan, dan mentega cair, aduk rata.&lt;br /&gt; - Siapkan loyang 22 x 22 X 5 cm.&lt;br /&gt; - Tuang 1/3 adonan, atur 1/2 bagian keju iris hingga menutupi adonan.&lt;br /&gt; Kejunya berasa banget, dan kreess kreess gitu...&lt;br /&gt;&lt;br /&gt;&lt;span style="font-style: italic;"&gt;by : Reny - dapur inspirasi&lt;/span&gt;&lt;br /&gt;&lt;br /&gt;Bahan :&lt;br /&gt;  - 500 gr terigu protein sedang&lt;br /&gt;  - 200 gr margarin&lt;br /&gt;  - 200 gr butter&lt;br /&gt;  - 300 gr keju edam cap ayam hitam (matured), kalau terlalu asin kurangi.&lt;br /&gt;&lt;br /&gt;Untuk olesan dan taburan&lt;br /&gt;  - 2 kuning telur&lt;br /&gt;  - Keju cheddar parut&lt;br /&gt;&lt;br /&gt;Caranya :&lt;br /&gt;&lt;br /&gt;  - Kocok margarin dan butter sebentar saja jangan sampai putih.&lt;br /&gt;  - Masukkan terigu dan keju edam parut, terigu jangan dimasukkan semua dulu, lihat adonan           sampai bisa dipulung.&lt;br /&gt;   - 250 gr keju edam/kraft diparut kasar, dijemur sampai agak kering&lt;br /&gt;   - Vanili&lt;br /&gt;&lt;br /&gt;Caranya :&lt;br /&gt;&lt;br /&gt;  - Kocok butter, margarin dan gula sampai lembut.&lt;br /&gt;  - Kemudian tambahkan kuning telur, aduk sampai rata.&lt;br /&gt;  - Masukkan sagu dan keju parut.&lt;br /&gt;  - Masukkan adonan ke kantung segitiga dan beri cetakan spuit bentuk bunga.&lt;br /&gt;  - Semprotkan diloyang yang sudah dioles margarin, beri jarak.&lt;br /&gt;
